Mix Up Madness

Tonight was a kind of, throw-together-what-we-have-in-the-pantry type meal. I knew we had sweet potatoes and last week I'd planned to bake them and serve them with oven roasted asparagus and some angel hair pasta. However, when I went to retrieve the asparagus from the vegetable drawer, soggy stalks stared me in the face. *dumps in trash* Yuck. Luckily, mom had put the sweet taters in the oven already so I cooked a box of angel hair and mixed it with some oil, butter, parmesan cheese, and some crushed parsley flakes (my friend Linz told me about "Amish noodles"...they are so easy to make!). I ended up adding about 1/3 cup of butter and STILL had to add a good "blub" of oil to get the noodles workable. I just shook the cheese until it looked coated and set the container on the table so people could add more if they desired (I know I did). The parsley I just added til it looked right; I didn't want it to overwhelm the dish. Oh, and I put about a teaspoon of salt in with the water while the noodles were boiling, and then another when I was seasoning them, and sprinkled a little more from the shaker when I'd served them up on my plate. I just love salt on my pasta. So we had that, and ate our sweet potatoes with butter and brown sugar; I cut up a bunch of raw carrots to dip in some ranch; and we sliced apples and had some applesauce. Kinda weird not to have a meat at supper (I'm a huge meat eater, especially at supper! Even if it's just an egg), but it worked out all right.

  1. It was fab!! But I sure wish I would have seen that parmesan cheese on the table!! LOVE not having to think of all this stuff by myself right now!!!! (btw, this is mom, not Kayla, but she has her name on the google account now)

  2. rofl. i was like, dannng, kayla sounds like mom! and i'm re-reading it, then i get to the parentheses. hilarious. i think the parmesan must've been hidden behind the napkin holder or something...sowwy! glad i can give you a break :)
